DOC CASTEL DEL MONTE
The soft pressing and the static decantation of the grape musts, precede the start of the alcoholic fermentation, that takes place in steel tanks only with a temperature between 14°C and 18°C.
Varietal fragrances. Small red berries, wild plum and figs are the hints in evidence, that thanks to the loose soils, rich in skeleton and mineral salts, end with a full and intense final taste.
