DOC CASTEL DEL MONTE
The soft pressing and the static decantation of the grape musts, precede the start of the alcoholic fermentation, that takes place in steel tanks only with a temperature between 16°C and 19°C.
Varietal fragrances. Morello cherry, currant, raspberry and red cherry are the hints in evidence, that thanks to the loose soils, rich in skeleton and mineral salts, end with a fresh and persistent final taste.
