DOC CASTEL DEL MONTE
The soft pressing and the static decantation of the grape musts, precede the start of the alcoholic fermentation, that takes place in steel tanks only with a temperature between 14°C and 18°C. The different cultivars follow specific and suitable fermentation protocols before being properly bottled.
Delicate balance between varietal flavors and the complex mineral note of our soils. Pineapple, apricot, hawthorn, mandarin and wild strawberries are the hints in evidence that end with a fresh and persistent final taste.
