DOC CASTEL DEL MONTE
The soft pressing and the static decantation of the grape musts, precede the start of the alcoholic fermentation, that takes place in steel tanks only with a temperature between 14°C and 18°C.
Golden wine with vibe of summer pear, apple, yellow peach, jasmin and herbs in harmony with a mineral scent. The taste is soft, savoury and delicately fresch. In stainless steel tanks for about four months and then in glass bottles for other two months.
